Honey Chilli Potato is Indian Chinese-style fried potato fingers glazed with a sweet and spicy sauce. It is one of those potato snacks that you can keep digging into endlessly without even realizing you’ve finished an entire dish full of it. It is a big hit with kids and adults alike because it is crunchy, sweet, and spicy which makes it an ideal snack or as a starter. If you are not a potato fan you can also pair this sauce with other vegetables of your choice.
PREPARATION TIME: 15 mins
For the wedges:
4 medium-sized potato wedges/ fries of your choice.
4 tbsp corn starch.
2 tbsp all-purpose flour/ maida.
1 tbsp of salt.
For the sauce:
1 inch finely chopped garlic.
1 inch finely chopped ginger.
1 tsp finely chopped green chilli.
2 tsp soya sauce.
2 tbsp red chilli sauce.
2 tbsp tomato ketchup.
1 tsp salt.
1 tbsp honey.
1 tbsp sesame seeds.
1 tbsp of cornstarch.
COOKING TIME: 20mins.
LET'S GET STARTED!!
STEP1: Peel and cut all the potatoes as wedges or french fries. Take 2 cups of water and 1 tsp of salt and let it cook until soft.
STEP2: Drain the access water of the potatoes and let them cool.
STEP3: Once the potatoes are cooled down add 4 tbsp of cornstarch and 2 tbsp of all-purpose flour/ maida, and 1 tbsp of and combine them together, mix until the potatoes are coated properly.
STEP4: Deep fry the potatoes until golden brown. (TIP: Add 1 pinch of salt to the oil prior to frying the potatoes as it does not soak a lot of oil). Let the wedges to cool down.
FOR THE SAUCE.
STEP1: Take 2 tsp of oil in a pan and add 1inch finely chopped ginger, garlic, and green chili and saute them for 2 mins.
STEP2: Add 2 tbsp of soya sauce, 2 tbsp of red chili sauce, and 2 tbsp of tomato ketchup, and 2tbsp of honey mix them well.
STEP3: Take 1 tbs of corn starch and add 4 tbsp of water and prepare a slurry
add the slurry to the sauce.
STEP4: Add 1/4 cup of water to the sauce and let it cook for about 5 mins on low heat.
STEP5: Add the fried potatoes to the sauce and cook it for 3-4 mins.
STEP6: Garnish with some roasted sesame seeds and coriander.
