Cajun Potatoes is a creamy and tasty starter that is served at Barbeque Nation which is absolutely delicious. This recipe can be served as a snack or a starter. This is a very quick recipe with a few ingredients that turn out to be an amazing recipe! It is crispy potatoes served with a spicy and tangy sauce. Potato-based snacks are one of my favorite and this one you should definitely give a try.
PREPARATION TIME: 10mins.
2 cups of baby potatoes.
1 cup mayonnaise
2 tbsp of peri mix
1 tbsp of salt
1 tbsp of mixed herbs.
4 tbsp of milk.
4 tbsp of cornflour
4 tbsp of maida/ all-purpose flour.
STEP1: Take 2 cups of baby potatoes in a pressure cooker add 1/2 tbsp of salt 3 cups of water and let cook till 2 whistles.
STEP2: Remove the potatoes out of the pressure cooker and press them flat and keep them aside.
STEP 3: In a bowl take 4 tbsp of maida/ all-purpose, flour, 4 tbsp of cornflour, 1 tbsp of salt, and 1/2 tbsp of mixed herbs. Add water little by little until it forms a lump-free slurry. Coat the boiled potatoes with the slurry prepared and deep fry them.
STEP 4: Fry them until golden brown on both sides and set them aside.
STEP5: Take a bowl add 1 cup of mayonnaise, 1 tbsp of salt, 2 tbsp of peri-peri mix, 1 tbs of mixed herbs, and mix it well it would be a bit thick to get a sauce-like consistency, add 2-3 tbs of milk and the sauce is ready.
STEP6: Add the prepared sauce on top of the potatoes and garnish it with some finely chopped onion(optional) and freshly chopped coriander and it is ready to serve!
